Grown on our own three-hectare plot on the foothills of Mount Dempo at roughly 1,600 metres. Altitude slows the cherry down and the fruit develops more sugar; red-cherry-only picking then removes the green and overripe fruit that flattens a robusta cup. The result is heavier body with far less of the rubbery finish the variety is unfairly known for.
